Guest guest Posted September 22, 2006 Report Share Posted September 22, 2006 Tofu, Snow Pea and Carrot Stir-Fry 2 tablespoons orange juice 1 tablespoon " lite " soy sauce 1 teaspoon sugar 1 teaspoon cornstarch 1/4 teaspoon salt 1/8 teaspoon pepper 1 tablespoon canola oil 1 clove garlic, minced 1 teaspoon minced fresh ginger 1 pound firm tofu, cut in 1-inch cubes 1/2 pound snow peas, trimmed 1 carrot, peeled and cut into matchsticks In bowl, combine orange juice, soy sauce, sugar, cornstarch, salt and pepper; set aside. Heat oil in large nonstick skillet over medium-high heat. Add garlic, ginger and tofu; cook until tofu is lightly browned on all sides. Add snow peas and carrot; cook, stirring for 2 to 3 minutes. Stir orange juice mixture until blended; pour into skillet. Bring to boil and cook, stirring gently, for 1 minute, until sauce is thickened. Makes 4 servings.
