Guest guest Posted April 10, 2006 Report Share Posted April 10, 2006 I think my own mind set seems to be okay on what I eat, turning vegetarian/vegan. I always have enjoyed cooking anyhow, and there are so many things to make and so many ways to make them! Really, with everything we have access to, recipes and more, it will be easy for me to use only certain products. Health food stores have powder egg substitutes that have absolutely no eggs in them. Mrs. Dash's has all kinds of herbs and spices with no salts. This way we can choose if we put salts, and if so what kinds of salts in our foods. We have already made tofu and a lot more. Even meat substitutes. And most brands are made to suit the tastes of all kinds of vegetarians. Instead of thinking what we cannot have, think of what we CAN have! Now a days, there is so much accessible to the modern vegetarian to help us all get back to basics! Anyhow, this is how I look at it, and to me it is exciting and part of our life journey! It's an adventure for us to experience! For instance, for breakfast this morning, I am having a small amount of oat cereal. I can have that with strawberries, blue berries or apple and banana. I am going to be making some bran muffins. As a diabetic, I cannot have sugar, so will be using grated apples and figs to sweeten it. Natural fruits Even applesauce can sweeten it. I can make that from scratch without the sugar too. I am particularly interested in tempeh and tofu (soy cheese) recipes. Isn't it nice these things are already made for us in health food stores?
