As I was scooping out the flesh, I noticed the parts closer to the skin were green. It was all soft, so I'm quite sure what to make of it. Is this normal? (BTW, I ate some of the less vibrantly green flesh, but took the conservative path on the rest until I hear back from you all.) I cooked them up along with the rest the butternut squash, that was a nice orange color and they tasted fine. Judy - Erin Saturday, September 23, 2006 5:09 AM Re: green buttercup squash? I asked the farmer about this situation yesterday. He said it was the pigment from the skin sort of leaking through and was not unusual.
