Guest guest
If you love coconuts you will love this recipe. I do. The first time I made this I burned the mixture when I added the coconut to the syrup. I suggest you stay and watch over this if you want to try it. Oh you can also cut the coconut into small pieces. We call that chip chip sugar cake as it is chipped up instead of grated. SUGAR CAKES Ingredients: 4 Cups Grated Coconut 1 Cup Water 1 Cup Sugar ½ tsp Cream Of Tartar 1 tsp Almond Essence Few Drops Of Food Colouring Method: Boil sugar and water to form a light syrup. When bubbles the size of small pearls appear, add grated coconut and cream of tartar. When the coconut mixture comes away from the sides of the pan easily, remove from heat and beat with a spoon for 3-5 minutes. Add essence and food colouring and mix well. Drop by spoonfuls on an oiled cookie tray. Allow to harden completely. Store in an airtight container.
