Here's proof that good chili doesn't need meat or take all day to prepare. Serve with warmed tortillas; sliced scallions; grated cheddar. Ingredients Qty. Measurement Description 2 tsp. canola oil 1 large onion, chopped 2 cloves garlic, minced 1 tbsp. chili powder 2 cans chopped tomatoes with chilies (14 oz. each can), such as Ro-Tel 1/4 cup coarse-grain bulgur 1 can red kidney or pinto beans (15 oz.), rinsed and drained Cook:under 30 minutes (cooking time) Preparation 1.. Place oil in a large saucepan over medium heat. Add onions and garlic; cook until soft, about 5 minutes. Add chili powder, stirring to mix. 2.. Add tomatoes and their juices and cook for 5 minutes. Stir in bulgur and beans. Reduce heat to medium-low and simmer until thick. 3.. Taste to check the seasoning, adding salt, pepper or a pinch of sugar as needed. Spoon into bowls and serve.
