Apple Oat Squares

Source: Healthy Food Choices (adapted)

 

2 cups quinoa flakes

2 Tbsp. oil

1/2 tsp. salt

1 1/2 cups apple juice

1 1/2 tsp. vanilla

3 cups shredded apples, packed

1/4 cup raw sunflower seeds

 

Mix well quinoa, oil, and salt; stir in apple juice and vanilla (let

stand while shredding apples). Stir in shredded apples. Pour into a

9 " x 9 " baking pan. Sprinkle the sunflower seeds over top; press down

lightly. Bake at 350 degrees F. about 45 minutes. Cut in squares and

serve hot with a dollop of favorite dessert topping.

Thanks for posting this, I made it yesterday and it disappeared! That

is the true test of a recipe. I made it with quiona and another dish

with oldfashioned oatmeal. Both were excellent and I plan to use them

for non vegan, non gluten free church potlucks, family get togethers

etc. They taste like apple crisp without having to wash up dishes

after the snack.
