Happy pancake eating!!! flour mix: 3 cups white rice flour 3 cups brown rice flour 1 cup tapioca flour 1 table spoon xanthan gum Mix all of this in a large zip lock baggie for this will be the flour mix for pancakes Pancake recipe: 1 cup of flour mix 2 table spoons sugar 2 tespoons baking powder 1/2 tespoon cinnamon 1/2 tespoon salt mix this together in one bowl and set aside next 3 tespoons of energy egg replacer mixed with 4 tablespoons of warm water, mix until frothy then add 2 tablespoons oil mix, then 1/2 cup apple sauce and 1 tespoon vanilla mix then mix in 1 cup of rice milk. now mix the dry bowl with the wet and stir well. if you want a thicker pan cake add 1/2 more flour, 1 tespoon baking soda to the dry mix and 1/2 more rice milk to the wet mix. I measure out all the dry ingredients into 4 zip lock baggies and keep them in the fridge. so I can just mix up the wet stuff and I am ready to go. saves time saves money You can sub the apple sauce for a 1/2 cup of bananas mashed or pumpkin caned it works out fine. or you can add to the original recipe blueberries the wild one are smaller and work out fine. Nuts if ok are great also about 1/4 cup.
