Guest guest Posted April 19, 2005 Report Share Posted April 19, 2005 Pumpkin Pie 2 cups pumpkin 1 cup soy milk (or alternative/try coconut milk) 1/2 cup sugar 1/4 cup cornstarch 1 tsp. vanilla 1 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. ginger 1/2 tsp. nutmeg 1/4 tsp. allspice Blend all ingredients together until smooth. Pour into a gf piecrust. Bake at 425 degrees for 10 minutes. Reduce heat to 350 degrees and bake for 50 additional minutes. This recipe also makes a delicious baked pudding.
