Guest guest Posted June 12, 2006 Report Share Posted June 12, 2006 Bavarian Potato Pie Source: Creation Illustrated 4 potatoes, peeled and boiled 1 cup sauerkraut, rinsed 1 Tbsp. olive oil 1/2 cup onion, chopped 1/2 cup mushrooms, sliced 3 soy vegetarian links 1 can (10 1/2 oz) cream of mushroom soup* pie crust Saute onions and mushrooms in a small amount of olive oil. Slightly mash the cooked potatoes, leaving some bite-sized chunks. Mix mushroom soup with the potatos, onions, and mushrooms. Slice soy links into bite-sized pieces and mix with sauerkraut. Place the potato mixture on the bottom of the prepared pie crust; then add the sauerkraut mixture on top. Place a top crust over all (in strips if you wish).
