Hi Everybody, Here's " Pumpkin Pie " and Pie Crust from Janee's raw

food class on Wed.

" PUMPKIN PIE "

 

2 cups butternut squash or shredded pumpkin

 

1 cup dates (pits removed)

 

1/2 cup almonds (soaked at least 8 hours or overnight) or pumpkin

seeds

 

1/2 teaspoon or 1 teaspoon of cinnamon

 

1/8 teaspoon of grounded ginger

 

1/8 teaspoon of ground cloves

 

1/8 teaspoon of nutmeg

 

1/4 cup of water or you can use almond milk or rice milk or soy milk

instead of water

 

Mix shredded pumpkin and water in a food processor (using the S-

Blade)

for several minutes. Add the other ingredients and mix for several

more minutes or until well-blended. Dump into pie crust below. Best

chilled for several hours before serving.

 

Janee said this " Pumpkin Pie " is not easy to make. Said to chop up

almonds in food processor first and then Vitamix. This pumpkin pie

was so good.

 

Now here's the Pie Crust:

 

PIE CRUST:

 

2 cups almonds--soaked and dried or dehyrdated

 

1/2 cup dates--pits removed

 

Mix all the ingredients in a food processor. Add a little water if

needed to turn the blades. Form into a pie crust in a pie plate or

spring form pan
