I was thinking about grilling the veggies instead of steaming them.

That is if I ever get around to making this. :) Jamie

Tahini Tabbouleh

Amount Measure Ingredient -- Preparation Method

1 1/4 cups water

1 cup bulgur wheat

2 ears corn

1/2 pound asparagus -- trimmed and chopped

2 zucchini -- chopped

1/2 pound sugar snap peas

juice of 1 lemon

1 tablespoon balsamic vinegar

1 tablespoon tahini

3/4 cup plain nonfat yogurt (or soft tofu beaten -- until

smooth)

1/2 cup minced fresh parsley

4 scallion , including greens -- chopped

1/2 pound cherry tomatoes -- halved

salt and pepper -- to taste

 

Bring the water to a boil in a small saucepan. Add the bulgur and let the

water return to a boil. Cover and remove from heat. Let sit, covered, for

30 minutes. Pour the bulgur into a sieve and press it with the back of a

wooden spoon to squeeze out excess water.

 

Meanwhile, bring a large pot of water to a boil. Add the corn and return to

a boil. Cover the pot, and remove from heat. Let sit 8-10 minutes.

Transfer corn to a plate. Let cool.

 

Steam the asparagus, zucchini, and snap peas.

 

In a large mixing bowl, whisk together the lemon juice, balsamic vinegar,

tahini, and yogurt. Stir in the bulgur, parsley and scallions. Add the

steamed veggies and cherry tomatoes. Season with salt and pepper. Toss

well and serve at room temp.
