Jamie * Exported from MasterCook * Tahini Tabbouleh Recipe By : Essential Vegetarian-Diane Shaw Serving Size : 4 Preparation Time :0:10 Categories : Essential Vegetarian *To Be Posted Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups water 1 cup bulgur wheat 2 ears corn 1/2 pound asparagus -- trimmed and chopped 2 zucchini -- chopped 1/2 pound sugar snap peas juice of 1 lemon 1 tablespoon balsamic vinegar 1 tablespoon tahini 3/4 cup plain nonfat yogurt (or soft tofu beaten -- until smooth) 1/2 cup minced fresh parsley 4 scallion , including greens -- chopped 1/2 pound cherry tomatoes -- halved salt and pepper -- to taste Bring the water to a boil in a small saucepan. Add the bulgur and let the water return to a boil. Cover and remove from heat. Let sit, covered, for 30 minutes. Pour the bulgur into a sieve and press it with the back of a wooden spoon to squeeze out excess water. Meanwhile, bring a large pot of water to a boil. Add the corn and return to a boil. Cover the pot, and remove from heat. Let sit 8-10 minutes. Transfer corn to a plate. Let cool. Steam the asparagus, zucchini, and snap peas. In a large mixing bowl, whisk together the lemon juice, balsamic vinegar, tahini, and yogurt. Stir in the bulgur, parsley and scallions. Add the steamed veggies and cherry tomatoes.
