Guest guest Posted March 17, 2003 Report Share Posted March 17, 2003 I bet that fat free half and half would work here. * Exported from MasterCook * " Favorite Mexican Casserole " (Vegetarian) Recipe By :The Junior League Of Tucson, Arizona Serving Size : 6 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup chopped onion 2 tablespoons butter 8 ounces tomato sauce 4 ounces diced green chilies 1/2 teaspoon celery salt 1/4 teaspoon pepper 2 eggs 1 cup half and half 6 corn tortillas 3/4 pound Monterey jack cheese -- shredded 8 ounces sour cream 4 ounces cheddar cheese -- shredded Saute onion in butter until onion is transparent. Add tomato sauce, chilies, celery salt, and pepper. Simmer for 5 minutes. Beat eggs and combine with half and half. Stir into tomato mixture. Quarter tortillas and layer one-third of the tortillas, one-third of the tomato mixture, and one-third of the Jack cheese in a 4-quart casserole. Repeat three times. Carefully frost with sour cream and sprinkle with cheddar cheese. Bake at 350 for 35-45 minutes.
