Baby Greens with Warm Goat Cheese and Walnut Vinaigrette

Amount Measure Ingredient -- Preparation Method

4 teaspoons finely chopped walnuts

1 tablespoon fresh bread crumbs

1 teaspoon chopped chives

1 teaspoon chopped parsley

4 ounce fresh goat cheese (log) -- cut into 4 rounds

VINAIGRETTE:

3 tablespoons walnut oil

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 shallot -- minced

Salt and freshly ground pepper

4 cups baby greens -- washed and dried

8 cherry tomatoes -- cut in half

 

Heat oven to 350F. Combine the walnuts, bread crumbs, chives and parsley in a

small bowl. Press the mixture onto all sides of the goat cheese rounds. Place

the rounds on a nonstick pan and bake 5 to 8 minutes, until warmed through.

 

Whisk vinaigrette ingredients; toss with greens. Divide among 4 plates and top

with a goat cheese round and 4 tomato halves. Makes 4 servings.

 

Per serving: 323 calories (86 percent from fat), 30.7 g fat (8.3 g saturated,

11.9 g monounsaturated), 22.4 mg cholesterol, 7.9 g protein, 6.1 g

carbohydrates, 1.5 g fiber, 159 mg sodium.
