Rockin' Tacos

Amount Measure Ingredient -- Preparation Method

4 Corn Tortillas -- or Fat Free Flour Tortillas

1 Tbsp. Onion Powder

1 tsp. Garlic Powder

2 cups Black Beans

1 Tbsp. Chile Powder

1 1/2 cups Frozen Corn -- thawed and drained

4 oz. Green Chiles chopped

3/4 cup Salsa

1 cup Lettuce shredded

1/2 cup Sour Cream -- fat free

1 cup Tomatoes chopped

1 cup Cheddar Cheese Shredded -- fat free

 

Lightly spray nonstick skillet with nonfat cooking spray and heat over medium

heat.

 

Add beans to skillet; sprinkle with onion powder, garlic powder and chili

powder, mix well.

 

Add corn and green chilies to bean mixture and cook, stirring frequently, until

heated through.

 

Add salsa to skillet and cook over medium heat; reduce to low, cover and simmer

10-15 minutes.

 

Warm flour or corn tortillas in oven; serve tacos with lettuce, sour cream,

tomatoes and shredded cheese.
