Guest guest Posted December 13, 2002 Report Share Posted December 13, 2002 Hello, ok here is recipe as requested...i give or takehere and there if i dont have exact thats ok if i have more of something else i throw that in...the more onions the better it tastes...Also some stoves work diffrent..my MILuses 4 cups water me i use up to 6 so i will give low an dhi ends and you can start with low and work way up if needed...source on all my greek recipes is my Mil...Thing is one of my fav dishes was pastitcho so wahat cani replace the " m*** " with? ideas? would love tpo make a dishe to pass around that is veg to both moms and mil...ok here is recipe..hope you enjoy warm regards niccii @@@@@ Spanakortizo 1 cup rice ( i use uncle bens) 1/8 cup olive oil( i use the greek more flavor) 1 can tomato paste( i use flavored when i have0 1 bag spinach (washed) 6-8 Gr onion 1-2 onions 1-2 parsely 4-6 cups water salt and pepper to taste Chop onions and fry in olive oil in a large pot..when done to your likeing add spinach and let it cook till wilted well...add rice, water,parsely,tomato paste and salt and pepper.I use med - med low and cover..( rice cooks faster this way..start with 4 cups water (must cover veggies at least)and add as you go..more onions you add more you will need..portions? unsure never measured this is all in teh head lol hands pinches ect...measured out lol and i NEVER measure hope you like !! Have you tried the meatless meat -- or soy burger -- or crumbles -- or tvp? it comes in a roll. Those kinds of textured soy proteins might work in this casserole. You may need to increase the cinnamon a little. add a pinch of sugar. Could add eggplant: it's a little chewy when it's par-boiled; cooled; diced.
