Italian Dressing (The Ark)

 

Recipe By :The Ark Restaurant, Long Beach, Washington State, USA

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

8 cloves garlic

2 green onions -- sliced

1 teaspoon chopped parsley

1 tablespoon Dijon mustard

3 twists fresh pepper

2 lemons -- juice of

3 tablespoons raspberry wine vinegar

1 cup olive oil

1 cup salad oil

1 teaspoon sugar

 

Blend well in a food processor: garlic, onions, parsley, mustard, pepper, lemon

juice, vinegar.

 

Combine oils together. With processor running, slowly add oils to above

mixture. Add sugar to take the sharpness off the garlic. [brenda's note: Store

in the refrigerator for up to 3 weeks (only) -- according to the U.S. Food &

Drug Admin., because it has fresh garlic and onions.]

NOTES : Chef Lucas' special creamy vinaigrette is a classic Italian dressing. At

the Ark Restaurant, they claim this on lettuce makes the best salad you ever

had.
