Guest guest Posted December 1, 2002 Report Share Posted December 1, 2002 * Exported from MasterCook * Mint Melt-Away Cookies Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup sugar 1 cup vegetable oil 1/2 cup confectioners sugar 3/4 cup soft butter or margarine 2 eggs -- beaten 2 tsp. vanilla extract 1 cup crushed peppermint candy canes 4 cups all-purpose flour 1/2 tsp. salt 1 tsp. Baking Soda 1 cup crushed pecans Preheat oven to 375 degrees. Cream sugars, oil and butter in large bowl. Add eggs and vanilla. Stir in crushed candy and mix well. Stir flour, salt, soda and pecans together, and then stir into creamed mixture. Drop by teaspoonfuls on an ungreased cookie sheet. Bake for 7-10 minutes or until the cookies start to brown around the edges. Cool on wire rack. Makes approximately 36 cookies.
