Guest guest Posted November 15, 2002 Report Share Posted November 15, 2002 easy to limit the " butter " * Exported from MasterCook * Apple Filled Acorn Squash Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : 2002-11-15 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Butter -- for baking dish 3 acorn squash -- halved lengthwise, seeded or other favorite small squash 4 tart apples -- peeled, cored, 1/4-inch slices 2 teaspoons lemon juice 3/4 cup brown sugar 1/4 teaspoon ground ginger Salt and freshly ground black pepper -- to taste 6 tablespoons butter Preheat the oven to 350 degrees. Place the squash halves, cut-side down, in a buttered baking dish. Bake 35 minutes. In a mixing bowl, combine the apple slices, lemon juice, brown sugar and ginger. Turn the squash over and sprinkle with salt and pepper. Fill with the apple mixture. Dot with butter. Return to the oven for 25 minutes or until the squash is tender. Makes 6 servings.
