Guest guest Posted November 15, 2002 Report Share Posted November 15, 2002 * Exported from MasterCook * Vermicelli with Zucchini Recipe By :Jo Ann Shirley Serving Size : 4 Preparation Time :0:00 Categories : pasta send vegetable Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds zucchini 1/4 cup olive oil 1 onion--chopped 1 pound tomatoes-- peeled and chopped 2 cups water 2 tablespoons chopped fresh basil 1/2 pound vermicelli-- broken into pieces salt and pepper Slice the zucchini into 1/2-inch pieces Saute' the onion in the oil until golden brown. Add tomatoes and simmer for five minutes. Add water and bring to a boil. Add zucchini and basil and cook for five minutes. Stir in vermicelli and cook over a low heat until tender, stirring occasionally. Season with salt and pepper to taste.
