Guest guest Posted November 14, 2002 Report Share Posted November 14, 2002 * Exported from MasterCook * Sweet Potato, White Bean and Pepper Tian Recipe By :Jeanne Lemlin Serving Size : 4 Preparation Time :0:00 Categories : 2002-11-13 Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 14 ounces canned small white beans -- rinsed 3 each dark orange sweet potatoes (medium large) 1 red bell pepper 1 green bell pepper 1 medium red onion 2 plum tomatoes 5 garlic cloves -- thinly sliced 1/2 teaspoon salt freshly ground black pepper -- generous seasoning 1/3 cup olive oil THE TOPPING: 3 slices homemade-style white bread 1 tablespoon olive oil 1. Preheat the oven to 375F. Peel the potatoes; quarter lengthwise and cut into 1/4-inch slices. Cut the bell peppers into 1-inch chunks. Cut the red onion into 2-inch chunks and separate sections. Cut the tomatoes into 1 1/2 inch chunks. 2. Combine all the vegetables, garlic, salt, pepper, and oil in a large bowl and toss well. (The vegetables can be prepared to this point up to 4 hours in advance.) 3. Pack the mixture into a 2 1/2- or 3-quart shallow baking dish and flatten the top surface. Bake 45 minutes. 4. To make the fresh bread crumbs, tear up the bread and make crumbs out of it in a food processor or blender. Pour the crumbs into a bowl and drizzle with the oil. Rub the oil into the crumbs with your fingertips to moisten them evenly. 5. Remove the tian from the oven. Spread the crumbs all over the top. Return the tian to the oven and bake 15 minutes more, or until the topping is a rich golden color. Let sit 10 minutes before serving. TIP: Although traditional tians are baked in heavy ceramic dishes, you will have good results using a more common baking dish as long as it is shallow and has 2 1/2 -3 quart capacity, such as a 12 x 2 x 7-inch Pyrex dish. A tian (pronounced TEE-ahn) is an earthenware casserole as well as the name of the finished dish. Because the vegetables in a tian are coated with olive oil and slowly baked, they exude delectable juices that caramelize and develop a rich flavor. White beans enhance the protein content of the dish while adding a soft, buttery dimension. No precooking is needed before piling everything in the casserole, so you can assemble this main course in no time. Nutr.
