Guest guest Posted October 2, 2002 Report Share Posted October 2, 2002 * Exported from MasterCook * Hoisin Noodles Recipe By :Vegetarian Times Serving Size : 6 Preparation Time :0:00 Categories : Asian Pasta {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 tablespoons hoisin sauce 3 tablespoons chinese rice wine or dry sherry 1/2 cup vegetable broth 1 3/4 cups trimmed snow peas or sugar snap peas (about 6 ounces) 1 pound fresh lo mein or very thin fresh wheat spaghetti 1 teaspoon canola or vegetable oil 2 teaspoons minced fresh gingerroot 2/3 cup sliced water chestnuts 1/2 cup chopped scallions 1 teaspoon sesame oil 1 tablespoon finely chopped roasted peanuts additional hoisin sauce 1. In a small bowl, mix together the hoisin, wine, and broth; set aside. In a large wok or soup pot, bring 4 quarts of water to a boil. Assemble a bowl of cold water and a skimmer or strainer nearby. 2. Drop the peas into the boiling water until softened, about 30 seconds, then remove them with the skimmer or strainer and plunge them into the cold water. 3. Add the noodles to the boiling water. Cook according to package directions until just tender; drain, rinse well with cold water, and set aside to drain. 4. Wipe the wok dry and place over medium-high heat. Add the oil and ginger and stir-fry for 10 seconds. Reduce the heat to medium and stir in the hoisin mixture. Heat for 30 seconds, then stir in the noodles and toss thoroughly. Add the peas, chestnuts, scallions, and sesame oil and toss again until everything is well mixed and the noodles are hot. Place the mixture in individual bowls or one big serving dish and scatter the peanuts on top. Serve with a small dish of hoisin on the side. Makes 6 servings.
