Guest guest Posted September 29, 2002 Report Share Posted September 29, 2002 * Exported from MasterCook * Mushroom and Black Bean Wontons Recipe By :Vegetarian Times Low-Fat & Fast Serving Size : 6 Preparation Time :0:00 Categories : Asian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup chopped water chestnuts 4 ounces firm tofu 8 ounces stemmed and roughly chopped button mushrooms 3/4 cup chopped scallions 1 tablespoon black bean garlic sauce 8 ounces thin wonton wrappers 1 tablespoon canola or vegetable oil Hoisin sauce (optional) 1. In a food processor, mince together the water chestnuts, tofu, mushrooms, and scallions. The mixture should be slightly chunky. Transfer the mixture to a medium bowl and fold in the black bean sauce. 2. Assemble the wontons: Keep a small cup of water handy as you are filling the wontons. With your finger, moisten the edges of a wonton wrapper with a little water. Place 2 teaspoons of filling in the center of the wrapper. Fold the wonton to form a triangle. Then bring the two opposite corners of the triangle together to form a wonton. Place on a plate or parchment-lined baking sheet. Continue until you have used all of the wrappers and filling. 3. In a 10-inch nonstick skillet, heat 1 teaspoon of the oil over medium heat. Add 8 to 10 wontons at a time, taking care that they do not touch each other. Fry until the wontons are golden brown, 3 to 4 minutes on each side, reducing the heat if the pan begins to smoke. Repeat until all wontons are fried. Serve immediately. Serve with hoisin sauce if desired (hoisin sauce is a traditional accompaniment). PER SERVING: 175 cals; 8 g protein; 5 g fat; 26 g carbs; 3 mg chol; 223 mg sodium; 2 g fiber.
