Guest guest Posted August 30, 2002 Report Share Posted August 30, 2002 it's too late for spring garlic, of course! could use chive... * Exported from MasterCook * Egg Foo Young with Green Garlic, Kale and Brown Rice Recipe By :Knoll Farms Serving Size : 6 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups water 1 1/2 cups brown rice -- uncooked 1 stalk broccoli -- flowerets halved stems diced (1/4-inch) 1 tablespoon olive oil 1 small onion -- diced 1 medium carrot -- grated 4 large leaves red russian kale -- cut in chiffonade 1 stalk celery -- diced 1 medium parsnip -- grated 5 eggs -- (5 to 6) 3 cups vegetable stock -- boullion or consumme 4 tbsp cornstarch 1/3 cup cold water 1 knob ginger -- finely minced 2 tbsp Braggs liquid amino acids or substitute soy sauce -- Tamari sauce, etc 2 tbsp chives -- minced (2 to 3) 1 stalk green garlic -- halved lengthwise sliced thinly Put the rice on to cook and broccoli flowerets on to steam. Keep an eye on the broccoli flowerets; remove from heat and set aside when crisp tender. Meanwhile, over low heat, saute onion and broccoli DICE in olive oil for about 5 min. Add kale, celery, and parsnips to sauteing onions. mix well and saute for about 5 min. Remove from heat. Beat eggs until thick. Gently blend in the sauteed veggies into the eggs. Spray a griddle or large pan with vegetable oil spray and heat over medium low setting. Ladle vegetable-egg mixture onto griddle to form patties. Put veggie stock or consume on to boil. Brown patties on one side, turn and brown the other. Place in covered container in warm oven as you finish the gravy and warm the rice. When stock boils, stir in cornstarch paste, ginger, and Bragg's. If a more salty flavor is desired add more Braggs. If a less salty, add more water. As you remove from heat, stir in chives. When rice is cooked take a deep breath and switch into presentation mode. Place a generous serving of rice on each plate and artistically arrange egg foo young patties and broccoli flowerets. Ladle gravy over rice and patties, garnish everything with green garlic. Green or spring garlic resembles spring onion with bulb and stalks. This mild flavored garlic is young and tender and can be enjoyed like a vegetable. It is often grilled and eaten whole including the green tops.
