Guest guest Posted August 3, 2002 Report Share Posted August 3, 2002 * Exported from MasterCook * Wild Spearmint Pineapple Sorbet Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : The Wild Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups pineapple chunks 1 cups water -- (1-1/2) 1/2 cup raw cashews 1/2 cup canola oil 1/4 cup vegetable glycerin -- honey, barley malt, or rice syrup 1/4 cup lecithin granules 3 tablespoons chopped fresh wild spearmint leaves or 1 tbsp dried -- finely crumbled 1 teaspoon liquid stevia -- optional 1/2 teaspoon salt In a blender, combine all the ingredients and process until smooth. Chill the mixture (or begin with chilled ingredients) if required by your ice cream machine. Pour the mixture into the ice cream machine and freeze according to the manufacturer's instructions.
