Zucchini and Onion Omelet

Amount Measure Ingredient -- Preparation Method

2 tablespoons butter -- divided

1/2 cup thinly sliced zucchini

1/4 cup minced onion

2 eggs

1 tablespoon heavy cream

or half-and-half

1 teaspoon minced fresh chervil or parsley -- (rounded)

1/2 teaspoon minced fresh thyme

or 1/8 to 1/4 teaspoon dried thyme, crushed

Salt and freshly ground white pepper -- to taste

 

1. Melt half the butter in medium skillet. Saute zucchini and onion until

tender, about 5 to 8 minutes. Spoon zucchini and onion into a bowl and set

aside. Keep warm.

 

2. Wipe out skillet. Melt remaining butter in skillet. Whisk together eggs,

cream or half-and-half, chervil or parsley, thyme, salt, and white pepper. Pour

into skillet. Cook over medium heat, occasionally lifting up edges of omelet to

allow uncooked portion to flow under and cook. Keep omelet loose from pan.

 

3. When top is creamy and slightly underdone, sprinkle on cooked zucchini and

onion. Gently fold omelet in half and ease onto serving plate.

 

VARIATIONS: Use the basic technique here, but substitute one of the following

for the zucchini to expand your omelet repertoire: 1/2 cup thinly sliced

mushrooms; 1/2 cup cubed, peeled, and seeded tomatoes; 1/2 cup peeled and cubed

eggplant; or 1/2 cup diced green or red bell peppers.

NOTES : It's all too easy to relegate an omelet to the breakfast table. The

French however, consider the dish appropriate to any meal and, indeed, nothing

could be more pleasurable than a well-made omelet, some crusty bread, and a

glass of Chablis. A two egg omelet serves 1. Or pair with a hearty salad and

bread to serve 2.
