Guest guest Posted July 23, 2002 Report Share Posted July 23, 2002 with olive oil, lemon juice, and mint * Exported from MasterCook * Mashed Potatoes with Garlic Recipe By :Cornelia Schinharl Serving Size : 4 Preparation Time :0:45 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound potatoes 2 garlic cloves -- or more to taste fresh mint, parsley, or dill 6 tablespoons hot water -- or as needed 2 tablespoons fresh lemon juice -- (2-3 tbs) 2 tablespoons olive oil -- (2-3 tbs) salt white pepper GARNISH: black olives 1. Wash the potatoes and put them, unpeeled, in a pot with enough water to cover. Cook, covered, over medium heat for 20 to 30 minutes, or until soft. 2. Pour off the water and when the potatoes have stopped steaming, place them in a large bowl. Peel and mash them fine, with a fork or potato masher. 3. Peel the garlic and put through a press; add to potatoes. Wash the mint and pat it dry, and chop fine; sprinkle over potatoes. Add about 6 tablespoons hot water, lemon juice, and oil to the potatoes and mix well. It should be a smooth creamy mixture. 4. Season the mashed potatoes to taste with salt and pepper and lemon juice. Serve garnish with olives.
