It makes a great base for ethnic spices. like southwestern or italian or cajun .... Here's our latest variation. It was very tasty soup. >>>We think it would be great over rice as a main dish - like in red beans and rice vegetarian ;-) <<< We served this with a salad in a pita! * Exported from MasterCook * Bayou Beans Soup ~2pts Recipe By :KP Slimmer Meals 2002 Hanneman (ed) Serving Size : 2 Preparation Time :0:00 Categories : Beans Rice Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- olive oil spray 1/3 cup diced yellow onion 2 tablespoons diced green bell pepper 2 tablespoons diced yellow bell pepper 1/4 cup sliced celery garlic -- to taste 15 ounces Five Bean Vegetable Soup -- (Health Valley) 1/4 cup water SEASONINGS: 1/2 tablespoon dried parsley 1 teaspoon dried oregano 1/2 teaspoon dried thyme 1 teaspoon sun-dried tomato flakes 1/8 teaspoon cayenne pepper Lightly brown the onion in a sprayed, medium-size sauce pan. Add bell pepper and saute to soften for 1 minute. Add the celery, garlic, and contents of soup can, plus water. Heat to boiling. Reduce heat immediately to lowest setting. Add seasonings. Simmer, uncovered, for 15 to 20 minutes, stirring occasionally. Serve hot. Per Serving: Calories 92 (20% from fat); 2g Total Fat; 2g Fiber (2 WW POINTS) VARIATIONS: * Replace sun-dried tomato flakes with dried chipotle chile flakes. * Replace cayenne with Cajun seasonings. Add tabasco sauce, a splash of vinegar before serving on rice. * Add tomato paste and Parmesan Cheese and serve with farfalle. * Add corn and burrito seasoning dry mix and serve with tortillas. * Add salsa and top with tortilla corn chips. * Add spinach and ditalini pasta.
