Bayou Red Beans and Rice

Amount Measure Ingredient -- Preparation Method

1 cup red kidney beans -- soaked overnight

4 cups water

1 medium yellow onion -- chopped coarse

1 medium green bell pepper -- diced

1/2 cup sliced celery

2 whole garlic cloves -- peeled

SEASONINGS:

1 tablespoon dried parsley

2 teaspoons dried oregano

1 teaspoon dried thyme

1/4 teaspoon cayenne pepper

ADDITOINS:

1/2 teaspoon salt

tabasco sauce

4 cups cooked rice

 

1. Drain the beans. In a medium saucepan, place the beans, water, onion, bell

pepper, celery and garlic and cook for about 1 hour over medium heat, stirring

occasionally. Add the seasonings (no salt yet), and cook for about 30 minutes

more until the beans are tender.

 

2. Remove the garlic from the pot; discard. Season with salt and hot sauce to

taste. Serve over the rice or add to soups or stews.
