Caramel Pear Fool

1 can pear halves -- (15-ounce) drained

1/4 cup sugar

2 tablespoons water

1/2 teaspoon vanilla

1/2 cup well-chilled cream

 

In a blender puree pears until smooth. Prepare a large bowl of ice and cold

water.

 

In a dry small saucepan heat sugar over moderately high heat, without stirring,

until it begins to melt, and continue cooking, swirling pan, until it is a

golden caramel. Stir in water, pear puree, and vanilla carefully (mixture

bubbles up) and cook, stirring, until caramel is dissolved. Remove pan from heat

and set in large bowl of ice and cold water, stirring occasionally, until

chilled.

 

In a chilled bowl beat cream until it holds stiff peaks and gently fold into

caramel mixture until just combined and streaks are still visible.

 

Spoon fool into 2 stemmed glasses and chill until ready to serve. Serves 2. May

be doubled.
