Guest guest Posted July 19, 2002 Report Share Posted July 19, 2002 xposted * Exported from MasterCook * Kachoomber Raita ( Mixed Vegetables in Yoghurt ) Recipe By :Jeeti Gandhi Serving Size : 4 Preparation Time :0:00 Categories : Condiments Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups plain low-fat yogurt 1/2 teaspoon roasted ground cumin -- see tips 1 teaspoon ground cumin 1/2 teaspoon pepper 1/2 teaspoon paprika 1 teaspoon grated lemon rind 1/4 cup finely chopped cucumber 1/4 cup chopped tomato 1 cup chopped crisp lettuce 1 tablespoon finely chopped onion 1 tablespoon finely chopped mint leaves salt -- to taste paprika or roasted ground cumin -- for garnish Place the yoghurt, all the spices and the lemon rind in a bowl and whisk to mix. Stir in all the vegetables and salt. Garnish with a little paprika or roasted ground cumin. Serve chilled. VARIATION: Substitute the cucumber, tomato and lettuce with 1 1/2 cups (375 ml) of finely diced cooked potato and you have a delicious aloo (potato) raita. * For the Roasted Ground Cumin: 2-3 (30-45 ml) cumin seeds Roast the cumin seeds in a small frying pan without any oil until they turn dark brown. Allow them to cool, then grind into a fine powder in a coffee grinder (or pestle and mortar - ed). Store in an air-tight container.
