Asian-Style Noodles with Carrot and Scallion

2 ounces spaghettini

1 1/2 tablespoons soy sauce

2 teaspoons white-wine vinegar

2 teaspoons Scotch

1 teaspoon vegetable oil

1 teaspoon grated peeled fresh gingerroot

1 garlic clove -- minced and mashed to a paste with 1/4

teaspoon salt

1 1/2 teaspoons sugar

1/2 cup coarsely shredded carrot

3 tablespoons finely chopped scallion

 

Bring a large saucepan of salted water to a boil. Add spaghettini and cook until

just tender, about 10 minutes. Drain spaghettini well in a colander.

 

While spaghettini is cooking, in a small heavy saucepan bring soy sauce,

vinegar, Scotch, oil, gingerroot, garlic paste, and sugar to a boil, stirring

until sugar is dissolved. Add carrot and simmer until crisp-tender, about 3

minutes.

 

Transfer carrot and sauce to a large bowl. Add pasta, scallion, and pepper to

taste and toss to combine well. Serves 2 as a side dish. May be doubled.
