Guest guest Posted July 18, 2002 Report Share Posted July 18, 2002 * Exported from MasterCook * Coconut Curried Lentils Recipe By :Lentil Cookbook by Lee Mac Morris 1974 Serving Size : 4 Preparation Time :0:00 Categories : Legumes Side Dishes Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- sliced 1 clove garlic -- sliced 1 tomato -- peeled and sliced Salt -- to taste 1 tablespoon butter or oil 1 cup lentils -- cooked 1 cup coconut milk In heavy saucepan fry onion, garlic, tomato, curry powder, and salt, to taste, in butter or oil until onion is golden. Add lentils and coconut milk. Bring to a boil, reduce heat and simmer 20 minutes, uncovered, stirring occasionally. Mixture when cooked should be very thick; reduce liquid over high heat if necessary.
