I tried to send this the other night and had trouble.

Here it is again. Hopefully this time it will work.

 

The Boca sausages worked very well.

Smoked " Sausage " & Bean Stew

1 pkg Boca Smoked Sausages -- sliced

1 onion -- chopped

1 green bell pepper -- chopped

3/4 cup celery -- chopped

3 cloves garlic -- minced

1 16 oz can Fat-Free Refried beans

1 15 oz can Chili beans -- undrained

1/2 cup Hot Salsa

4 drops hot sauce

1 tbsp Cajun seasoning

1 tsp chile powder

2 cups cooked white rice -- for

accompaniment

 

In a deep skillet or chicken fryer, brown the

" sausage " ; add the onions, green pepper, celery, and

garlic. Saute in a bit of oil until vegetables are

tender and " sausage " is browned. This should take 7

minutes.

 

Pour in 1 cup water, refried beans and chili beans.

Stir until well mixed.

 

Add the salsa, hot sauce, cajun seasoning, and chile

powder. Stir to mix. Simmer the dish for about 10

minutes, add the rice, and mix well. Continue to

simmer for 5-10 minutes, or until hot.

 

Serve over cooked rice.
