Guest guest Posted July 19, 2002 Report Share Posted July 19, 2002 and green onion rings -- cheezy! * Exported from MasterCook * Spaghetti with Four Cheese Sauce and Green Onions Recipe By :Cornelia Schinharl Serving Size : 4 Preparation Time :0:25 Categories : New Import Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 green onions 1 piece red chili pepper 2 ounces pecorino 2 ounces fontina cheese 2 ounces Gorgonzola cheese 2 ounces mozzarella cheese Salt 1 pound spaghetti 1 1/2 teaspoons olive oil 1 cup vegetable broth 2 tablespoons dry white wine Lemon juice Black pepper * Clean green onions. Finely chop 2 of the green onions and their tender greens. Cut remaining green onions into thin rings, cover, and set aside. Seed and finely chop red pepper. Finely grate pecorino and cut other cheeses into very small cubes. * For spaghetti, bring plenty of water to boil. Add salt and spaghetti and boil until al dente. * Heat oil in pot. Saute chopped green onions and chili pepper until wilted. Add vegetable broth and heat. Stir in cheeses, wine, and lemon juice, to taste. Cook over low heat, stirring, until thick. Season with salt and pepper. * Drain spaghetti and mix with cheese sauce. Serve sprinkled with green onion rings.
