I would like to confirm what Amanda suspected: when lemons and limes are

preserved/pickled, you eat them including their rinds. I have been

making Indian lemon and lime pickles for many years. They are absolutely

delicious and the main delicacy are the rinds - soft and incredibly

tasty when matured.

 

In the Indian culture you use both the pickled rind as well as the

flesh. However, I recently came across a Moroccan recipe which stated:

 

1/2 preserved lemon, rind only

 

I'll check if I have any lemon pickle recipes on my computer that I

could post.
