I can't seem to find it on the web this morning... thank you ;-) * Exported from MasterCook * Spinach and Hazelnut Lasagna Recipe By :Christine France 1998 Serving Size : 4 Preparation Time :0:00 Categories : Pasta Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds fresh spinach 1 1/4 cups defatted low-sodium vegetable broth 1 medium onion -- finely chopped 1 garlic clove -- crushed 3/4 cup hazelnuts 2 tablespoons chopped fresh basil 6 precooked lasagna sheets (9x6) 14 ounces canned chopped tomatoes 1 cup lowfat fromage frais or nonfat fresh ricotta GARNISH: slivered hazelnuts chopped parsley 1. Preheat oven to 400F. Wash the spinach and place in a pan with just the water that clings to the leaves. Cook the spinach over a fairly high heat for 2 minutes until wilted. Drain well. 2. Heat 2 tbs of the broth in a large pan and simmer the onion and garlic until soft. Stir in the spinach, hazelnuts and basil. 3. In a large ovenproof dish (9x12), layer the spinach, lasagne, and tomatoes. Season well between the layers. Pour over the remaining broth. Spread the fromage frais over the top. 4. Bake the lasagne for about 45 minutes (uncovered) until golden brown. Serve hot, sprinkled with lines of slivered hazelnuts and chopped parsley. (The lines are the troughs in the corrugated sheet lasagna) TIP - improve the flavor of the nuts by roasting them (dry pan or moderate oven for a few minutes.)
