Hi,

Well, the citrus peels and watermelon rind are edible. Typically, people

just eat the outermost part of citrus peels, as a seasoning, because the

white pith tastes bitter, but I believe that when lemons and limes are

preserved/pickled, you eat the whole thing. (Feel free to correct me if I'm

wrong here.) I believe I've seen at least one recipe for a relish-type

condiment where an entire lemon (minus seeds, I suppose) was mixed in the

food processor with other things.

Pickled watermelon rind is a Southern traditional food, and I think the rind

is the best part of a slice of watermelon. Of course I don't eat the outer

skin, but the pale green sour part is a treat!

I remember reading on one of the vegsource discussion boards, some girl said

she ate a canteloupe rind and felt just fine, but I can't imagine what would

motivate someone to do that! I mean, anything my garbage disposal can't

chew up, I'm not going to attempt.

As far as feeling sick after you eat fruit with grains, it might just have

to do with the fruit. I'm just guessing here, but I know that after I eat

grapes, or dried fruit, sometimes it upsets my stomach. Maybe having a full

stomach from eating the grains makes it a little harder to digest. Maybe

it's just a personal idiosyncracy.

Best wishes!

Amanda
