easy blackeyed pea, roasted pepper salsa/salad

Xposting a good one! Very easy salad to put together. Usually have these

ingredients on hand.

 

I did add garlic salt to my share. We served it tonight as a relish to top a

shiitake burger served open-faced. We got the burgers at sam's and I wish sam's

would get some more in.

 

(Marcel's recipe had a lot more oil and it made too much.)

Black Eyed Pea and Roasted Pepper Salad ~2pts

3/4 cup cooked black-eyed peas

DRESSING:

2 teaspoons extra virgin olive oil

1 teaspoon balsamic vinegar

1 tablespoon apple juice

1/4 teaspoon whole-grained mustard

1 pinch salt

1 pinch cracked pepper

ADDITIONS:

1 medium roasted red bell pepper -- diced

1 teaspoon chopped fresh parsley

1 teaspoon chopped fresh cilantro

 

Warm the beans in a microwave. Mix the salad dressing. Pour most of the dressing

over the beans. Add the roasted pepper and herbs. Stir. Chill for at least 30

minutes before serving.

 

Per Serving: Calories 121 (37% from fat); 5g Total Fat; 4g Fiber (2 WW POINTS)
