Lazy Days Potato Salad

18 ounces small new potatoes -- (500g)

4 ounces whole blanched almonds

3 tablespoons olive oil

1/2 lemon (juiced)

salt and pepper

2 medium Ripe Avocados

3 ounces ready to eat watercress -- (or 1 bag)

 

1. Pour a kettleful of boiling water into a medium saucepan, add salt and boil

the potatoes for 10 to 15 minutes until tender. Drain and set aside until cool

enough to handle.

 

2. Meanwhile, toast the almonds in a dry frying pan for 3 to 4 minutes, tossing

regularly so they color evenly, release their oils and become even nuttier. Turn

off the heat and leave to one side.

 

3. Whisk the olive oil and lemon juice together in a large bowl with a little

salt and pepper to make a dressing.

 

4. Halve the avocados and remove the stones. Cut each half in half again (this

makes peeling easier), then peel the avocado pieces and cut lengthwise into

thick slices. Toss the almonds, avocados and watercress lightly with the

potatoes until all the ingredients are evenly coated with the dressing. Eat

immediately, while the watercress is still crisp.
