Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 tablespoon butter or ghee -- (1 to 2)

1 tablespoon pure maple syrup

1 large Asian Pear or tart apple -- (about 3/4 pound), cored but

not peeled, cut into 1/4-inch-thick slices

2 tablespoons hazelnuts -- toasted and finely chopped

Asian pears are juicy sweet when raw and make delicious side dishes when cooked.

Here Asian pear slices are tossed in butter and maple syrup, then coated with

crushed hazelnuts. A simple yet pleasant side dish or dessert.

Melt butter in a medium skillet. Lower heat slightly, add maple syrup and cook

until bubbly. Add pear. Cook for 1 or 2 minutes, or until the sauce caramelizes

and forms a glaze around the fruit, turning gently but often. Add hazelnuts and

mix well. Serve immediately.

Yield 4 small servings

SERVING SUGGESTIONS: For a main meal, team with a grain dish such as Red Rice

with Five Vegetables (page 171) and Scrambled Tempeh (page 131).
