Garlicky Chard and Chick-Peas

1 tablespoon canola oil

3 large garlic cloves -- (3 to 4) forced through a garlic press

1 tablespoon grated gingerroot

1 teaspoon seeded, minced jalapeno or other fresh

chile -- or to taste

1/2 pound Roma (plum) tomatoes -- peeled and coarsely chopped

1/4 cup bean liquid or water

1 teaspoon red miso paste (akamiso)

1 teaspoon hoisin sauce

1 1/2 cups cooked chick-peas -- or one 15-ounce can chick-peas,

drained (cooking or can liquid saved)

1/2 pound red chard or Swiss chard or mustard greens -- coarsely

shredded, stems diced

Salt -- to taste

Sweet raw onion rings for garnish

 

Chick-peas and dark leafy greens make a delightful combination. A blend of dark,

rich miso and sweet, garlicky hoisin sauce produces a depth of flavor that one

associates with long, slow cooking. This dish is fast and easy to prepare.

 

1. In hot oil in a large skillet, saute garlic and gingerroot until golden. Add

jalapeno, tomatoes, and bean liquid or water, and bring to a boil. Lower heat

and cook, uncovered, until a thick sauce has formed, 7 to 12 minutes. With the

back of a spoon, mash any tomato that still hold its shape.

 

2. Add miso and hoisin sauce and mix well. Add chick-peas and chard. Simmer,

covered, 6 to 8 minutes, or just until chard is tender. Season to taste with

salt. Don't overcook or you will destroy the color and texture of chard. Serve

garnished with onion rings. Yield- 2 entree or 4 side-dish servings

 

SERVING SUGGESTIONS: Wonderful with any plain-cooked grain, especially rice or

millet. Sweet Potato Bisque (page 54) and Pear Slaw with Honey Pecans (page 84)

are two other excellent accompaniments. A compatible dessert is Chocolate-Glazed

Banana Cake (page 242). For a light lunch, team with warm chapatis and crisp

carrot sticks.
