Guest guest Posted June 1, 2002 Report Share Posted June 1, 2002 * Exported from MasterCook * Gardener's Pie Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 small prewashed red potatoes -- quartered salt 1 tablespoon vegetable oil 1 medium onion -- coarsely chopped, or 3/4 cup from salad bar 1 medium red bell pepper -- coarsely chopped, or 3/4 cup from salad bar 1 cup water 1/2 cup peeled baby carrots -- split lengthwise 1 cup green beans -- trimmed and halved 1 cup broccoli florets -- from salad bar 1 cup cauliflower florets -- from salad bar 1 small zucchini -- sliced crosswise 1/2-inch thick 1/4 teaspoon ground black pepper 3/4 cup milk 2 tablespoons all-purpose flour 3/4 cup shredded cheddar cheese Bring potatoes and salted water to cover to a boil in a medium saucepan over high heat. Reduce heat to low, cover and cook until tender, about 10 minutes. Meanwhile, heat vegetable oil in large ovenproof skillet. Sauté onion and red pepper until lightly browned--about 4 minutes. Add water, carrots, green beans, broccoli, cauliflower, zucchini, 1/4 teaspoon salt and the black pepper. Cover and cook until vegetables are just tender, about 8 minutes. Preheat broiler. Gradually stir 1/2 cup milk into the flour; add to vegetable mixture and cook until thickened, stirring constantly. Fold in 1/4 cup cheese. Drain potatoes well; mash unpeeled potatoes with potato masher or electric mixer, gradually adding as much of the remaining 1/4 cup milk as necessary to make them stay together. They should not be smooth. Spoon mashed potatoes over vegetable mixture, sprinkle with remaining 1/2 cup cheese and place under broiler, watching constantly until lightly browned, 1 to 2 minutes. Serve from skillet.
