Banana Chocolate Pie

Amount Measure Ingredient -- Preparation Method

FILLING:

2 cups chocolate-flavored soy milk

2 tablespoons agar flakes

3 bananas -- very ripe, peeled

CRUST:

1/2 cup whole-wheat pastry flour

3 tablespoons unsweetened coconut

1 tablespoon honey -- maple syrup, or rice syrup

1 tablespoon canola or corn oil

 

In a medium saucepan, combine soy milk and agar flakes. Stir over medium heat

until mixture comes to a boil. Lower heat, simmer, and continue stirring until

agar is completely dissolved, about 5 to 10 minutes. Remove from heat, set

aside.

 

Preheat oven to 400 degrees. Combine all crust ingredients thoroughly in a large

bowl until mixture is moist and crumbly. Press into the bottom and sides of a

lightly oiled 8- or 9-inch pie plate. Bake for 5 to 8 minutes, until golden

brown.

 

Place bananas in a blender or food processor with the warm soy milk mixture and

blend until smooth. Pour into the cooled crust. Chill for 1 or 2 hours, until

set.

 

Servings: 6 to 8.

 

VARIATION: To make puddling instead, eliminate the crust and place the filling

in small bowls. Use any flavor soy milk: Try vanilla with a few drops of almond

flavoring.

NOTES : I'm a picky banana eater. There is only one day, maybe two, after I buy

a bunch that I love their flavor. Not too sweet, not too soft, not too hard.

Then I'm usually left with three or four overripe, soft, and spotty bananas.

That's how I came up with this vegan recipe that contains no dairy products,

cholesterol, or added sugar.
