Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon canola oil 1 medium yellow onion -- diced 1 red or green bell pepper -- seeded and diced 4 cloves garlic -- minced 1 jalapeno pepper -- seeded and minced 6 cups vegetable broth 1/4 cup canned tomato paste 2 teaspoons dried oregano 1 1/2 teaspoons ground cumin 1/2 teaspoon freshly ground black pepper 1/2 teaspoon salt 1 cup corn macaroni (or spelt or quinoa macaroni) 1 1/2 cups corn kernels -- fresh or frozen 1 cup cooked black beans -- or canned, drained 1/4 cup chopped fresh parsley Makes 6 servings This intriguing variation of the Italian soup classic is a tureen of black beans, corn, vegetables, and assertive Southwestern spices. This is an ideal opportunity to try a specialty macaroni made with either corn, spelt, or quinoa. In a large saucepan, heat the oil over medium-high heat. Add the onion, bell pepper, garlic, and jalapeno pepper and cook, stirring, for 7 minutes. Add the vegetable broth, tomato paste, oregano, cumin, pepper, and salt, and bring to a simmer, stirring occasionally. Stir in the macaroni, corn, beans, and parsley, and return to a simmer. Cook, stirring occasionally, until the pasta is al dente, about 5 to 7 minutes. Remove from the heat and let stand for 5 to 10 minutes before serving. Ladle the soup into shallow bowls and serve with warmed flour tortillas. Variations: Add 2 tablespoons of chopped cilantro in place of the parsley or offer shredded Monterey Jack cheese as a garnish (about 1 tablespoon per serving).
