Stir Fried Mushrooms

 

Recipe By :Indian Cuisine (Lustre Press: Roli Books) 1996

Amount Measure Ingredient -- Preparation Method

4 1/2 teaspoons oil

2 onion -- sliced

1 teaspoon garlic paste

1 tomato -- chopped

1/2 teaspoon turmeric -- (haldi)

1/2 teaspoon garam masala

1/2 teaspoon red chili powder

salt to taste

1/2 kilogram mushrooms -- sliced

chopped fresh cilantro -- (green coriander)

2 cups cooked basmati rice -- for accompaniment

 

1. Heat oil and fry onions until golden in color. Add garlic and tomato; mix

well.

 

2 Mix in turmeric, garam masala, chilli powder and salt. Fry for 3 to 4 minutes.

Stir in mushrooms and simmer until mushrooms are tender, adding very little

water if necessary.

 

3 Garnish with chopped coriander and serve hot.
