Guest guest Posted May 22, 2002 Report Share Posted May 22, 2002 * Exported from MasterCook * Oriental Bean and Noodle Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups diced yellow onion 2 tablespoons peanut oil 2 tablespoons minced garlic 1 tablespoon minced ginger 3 cups diced tomatoes 1 cup sliced carrot 3/4 cup sliced celery 1 yam -- peeled and diced 1 cup cooked soybeans -- (or garbanzos) 5 cups hearty vegetable stock 1/4 cup dulse -- (not packed) 4 sprigs cilantro 1/4 teaspoon white pepper 3 tablespoons soy sauce 2 teaspoons honey or sugar 4 cups chopped bok choy 1 cup snow peas 4 ounces soba noodles 1/4 cup fresh cilantro -- chopped Yield: 8 servings * Prep Time: 25 minutes * Cooking Time: 1 hour A flavorful broth packed with vegetables, noodles and beans, this simple soup is a meal in itself. A dish of cilantro " pesto " may be passed for those guests with an insatiable garlic tooth. 1. In a 4-quart saucepan, saute the onions in the oil until translucent, about 10 minutes. Add the garlic and ginger and cook for another minute. Stir in the tomatoes, carrots, celery, yam, soy beans and stock. Add the dulse, cilantro sprigs and pepper. Bring the soup to a boil, stirring often. Reduce to a simmer, cover and cook, stirring occasionally, for about 25 minutes, or until the vegetables are just tender. 2. Raise heat to a low boil. Add the soy sauce and honey, then stir in the soba noodles and continue to cook, stirring often, for 5 minutes. Add the bok choy and allow the soup to cook until the noodles are al dente, about 5 more minutes. Stir in the snow peas. Remove the soup from the heat and mix in the chopped cilantro. Serve at once.
