Curried Vegetables

1/2 head cauliflower -- cut into florets

1 plum tomato -- coarsely chopped

1/2 onion -- sliced

1 clove garlic -- minced

1 teaspoon curry powder

1 cup fat-free vegetable broth

1 cup frozen peas

 

Servings: 4

 

Combine cauliflower, tomatoes, onions, garlic, curry and broth in a

microwave-safe dish. Cover; microwave on HIGH for 3 minutes. Stir in

peas. Cover; microwave on HIGH until peas are tender, about 3 minutes.

 

Per serving: about 66 calories, 0.6 g fat (7% of calories), 0 mg

cholesterol, 82 mg sodium, 4.9 g dietary fiber
