Creamy Veggie Rice

1/2 cup finely chopped onions

1/4 cup finely chopped mushrooms

1 clove garlic -- minced

1 tablespoon margarine

1 cup medium-grain rice

2 1/4 cups fat-free broth

1/8 teaspoon ground nutmeg

1 cup lightly packed chopped fresh spinach

1/4 cup low-fat milk -- (1 %)

1 tablespoon grated Parmesan cheese

 

Servings: 4

 

Speed-cooking tip: Chop onions, mushrooms and garlic all at once in a food

processor.

 

Cook onions, mushrooms and garlic in margarine for 3 minutes. Stir in

rice, broth and nutmeg. Simmer, covered, until liquid is absorbed, about

20 minutes. Remove from heat. Stir in remaining ingredients.

 

Per serving: about 224 calories, 2.5 g fat (10% of calories), 2 mg

cholesterol, 327 mg sodium, 0.7 g dietary fiber
