Broccoli With Herbs And Cheese

1 bunch broccoli -- cut into florets

2 cloves garlic -- minced

1 teaspoon grated lemon peel

1/2 teaspoon finely crushed dried rosemary

2 tablespoons fat-freevegetable broth

1 tablespoon lemon juice

1/4 cup flavored bread crumbs -- toasted

1 tablespoon freshly grated Parmesan cheese

Use precut broccoli florets, minced garlic in a jar, frozen and thawed

lemon juice (it tastes better than bottled), pregrated lemon peel (look for

it in the spice section of your supermarket), and prepared grated Parmesan.

 

Steam broccoli until tender, 5 to 7 minutes. Keep warm.

 

While broccoli is cooking, coat a small nonstick skillet with nonstick

spray and heat. Add garlic and cook for 30 seconds. Stir in lemon peel

and rosemary and cook for 1 minute. Add broth and lemon juice. Cook until

liquid is reduced to 1 tablespoon, about 30 seconds. Pour over broccoli

and toss.

 

Combine bread crumbs and Parmesan. Sprinkle over broccoli.

 

Per serving: About 61 calories, 1 .1 g fat (14% of calories), 1 mg

cholesterol, 119 mg sodium. 3.1 g dietary fiber
