Tofu and Apples

Amount Measure Ingredient -- Preparation Method

1 pound frozen tofu -- thawed and drained

1/4 cup cider vinegar

2 tablespoons soy sauce

1/2 teaspoon ground ginger

1 clove garlic -- minced

1/2 teaspoon dried basil

2 tablespoons water

2 tablespoons vegetable oil -- for shallow frying

1 large tart apple -- cored, coarsely chopped

1 large onion -- thinly sliced

cooked rice or pasta -- for accompaniment

 

1. Cut tofu into 1-inch cubes. In a bowl combine vinegar, soy sauce, ginger,

garlic, basil, and water. Add tofu and toss until the marinade is well absorbed,

about 3 hours.

 

2. In a heavy skillet heat oil. saute apple and onion in hot oil about 7

minutes, or until onions are fairly soft. Add tofu and any remaining marinade.

Cook for about 8 minutes, stirring constantly, or until heated.
